From Ancient Groves to Your Table

The Kalamata region of Greece's Peloponnese has cultivated olives for over two thousand years. The terroir—a unique combination of Mediterranean climate, limestone-rich soil, and sea breezes from the Ionian Sea—creates conditions ideal for producing the world's finest extra virgin olive oil. Our groves sit at the precise elevation where ancient olive trees thrive, their roots reaching deep into mineral-rich earth.

Each harvest, our olives are picked at peak ripeness and transported to our mill within hours. This timing is critical. The moment an olive is picked, enzymatic processes begin that affect flavor and nutritional integrity. By processing immediately, we preserve the delicate complexity of the fruit—the subtle herbaceous notes, the peppery finish, the golden color that indicates high polyphenol content.

Our cold-extraction process never exceeds 27°C, ensuring that heat does not degrade the oil's antioxidants or alter its character. The result is a living product—unfiltered, unrefined, and unchanged from the moment it leaves the press. This is olive oil as nature intended.

  • PDO Kalamata

The PDO designation is not a marketing term. It is a legal guarantee that the olives were grown, harvested, and processed entirely within the Kalamata region according to European standards. This ensures authenticity, traceability, and uncompromising quality.

  • Cold Extracted

Temperature control is critical. Our process never exceeds 27°C, preserving the oil's antioxidants, polyphenols, and delicate flavor compounds. Olives are processed within hours of harvest, before enzymatic degradation can occur.

  • Single Origin

We work with select family farms and bottle each harvest separately. You know not just the region, but the specific grove. This transparency and traceability is fundamental to our commitment to quality.

Uncompromising Quality

Every bottle of Dopio carries the Protected Designation of Origin certification—a guarantee that the olives were grown, harvested, and processed entirely within the Kalamata region according to rigorous European standards. This is not a marketing claim. It is a legal designation that ensures authenticity and traceability.

We work exclusively with select family farms that have stewarded their groves for generations. We know the soil composition of each grove, the age of the trees, and the precise harvest date. This complete transparency allows us to bottle each harvest separately, creating a product that is genuinely single-origin—traceable not just to a region, but to a specific grove.

Our bottling facility sits adjacent to our mill, eliminating unnecessary transport and exposure to light and air. From press to bottle takes less than 24 hours. We use dark glass to protect the oil from oxidation, and we recommend consuming within 18 months of harvest for optimal flavor and nutritional benefit. This is not a shelf-stable commodity. This is a fresh, living product that deserves to be treated with care.
